Our Journey

From lockdown project to multi-location Neapolitan pizzeria

In March 2021, Gearóid decided to take a leap of faith and follow his passion for food. Spotting a notable gap for authentic Neapolitan pizza, he began his journey to bring a bite of Naples to Limerick in the form of quality pizza.

After 3-months of researching recipes, practicing techniques, formulating ideas, and tasting many, many pizzas, Happy Dough Lucky was born! The plan was simple, combine the best ingredients he could find with his secret dough recipe and provide great service to the people of Limerick.

Starting small, Happy Dough Lucky opened its doors (or a hatch…thank you Covid) as a pop-up pizzeria. Buying two Gozney portable ovens they began serving pizzas to the local community in Dooradoyle with their small team of three.

Fast forward 4-months and 25,000 pizzas later, Happy Dough Lucky had their second permanent location open in Limerick with over fifteen outstanding staff members.

The Dough

Using the finest Caputo ‘00’ flour sourced directly from Naples, we combine precise measurements of water, yeast and salt before resting our dough for 72-hours. Our slow-rise fermentation technique allows the yeast to break down the starches within the flour into complex enzymes and sugars, producing an aromatic, flavourful pizza that’s easily digestible.

The Toppings

We use a combination of the finest Italian and local suppliers ensuring we have the best of what’s in season all year round. We top our pizzas with hand crushed tomatoes from Sardinia, and Fior di Latte Mozzarella from the south of Italy. Whilst keeping it local for our premium vegetables, smoked ham and shredded roast chicken to name a few.

The Cook

We thought where better to source our ovens from then the home of pizza? Just outside of Naples, our ovens were handcrafted and personalised by the experts at MP Forni (Grazie!). Baked at soaring hot temperatures in under 60-seconds, our crust becomes beautifully charred with ‘leopard’ printing packed with flavour. With the perfect level of chew, our airy yet slightly crispy dough comes to life with the melted cheese and fresh toppings.
